Recipe: Amy's Pear Tart
Ingredients
1 cup of sugar
3 oz. of unsalted butter
3 drops lemon of juice
A pinch of cinnamon
A pinch of salt
5 firm, ripe pears (Bosc, Bartlett, or Warren)
1 10" X 12" sheet puff pastry cut into 10" round
Preheat oven to 375F.
Peel, half, and core pears. Slice into long 1/4 inch slices.
Caramelize the sugar and butter until deep golden brown in a 10" heavy-metaled saute pan. Take off of heat, and add the lemon juice, cinnamon, and salt. Swirl in the pan to incorporate. Next, lay the sliced pears in the pan so the slices overlap. Place pan back over heat. and allow sugar to come up in the pan. Then, place 10" round of pastry over pears. poke the puff pastry with a fork all over. Place in 375F oven for 20 to 25 minutes until the crust is golden brown and crisp. Pull it out of the oven, and allow the tart to rest for 20 minutes. Place plate over the pan and turn over quickly. Finally, pull the pan off and voila!

A favorite book

It's a great read, and it made me want to quit my job and move to Paris. If you're stuck in a rut in life, it's a truly inspirational read. And, the recipes are tasty, too. (The mustard chicken is one of my favorites.) |

I read this one and thought it was a great read, but the fact of the matter is that it didn't help my cooking. I'm still making pigs in a blanket and sloppy joes. I can't pull off the gourmet dishes. Oh well, I always vote for going out. I mean, all those chefs do it for a living. |
